GCP 81: Tacoma Cabana

This week the guys talk to Jason Alexander from the Tacoma Cabana. Established in 2013, Tacoma Cabana is a local Tacoma tiki bar...which Wikipedia defines as an island-themed bar and restaurant that specializes in complicated fruit cocktails. They are generally decorated extravagantly with tropical décor, including island flowers and plants, surfboards and tiki carvings. Modern tiki bars often try to not only create an island look, but also make it appear vintage mid-20th century, when the style first became popular! (From their Yelp Page) Three years and running, Tacoma Cabana has been voted Best Cocktails of the west.

The show kicks off with conversation about Tacoma Cabana receiving Best Cocktails of the West award three years in row. They also discuss the reason it takes the team a little longer than other bars to prepare their drinks. With their drinks typically having 8 - 12 ingredients, it talks a little time to prepare and they also take pride in refusing to sacrifice quality for time. Most customers will rave that the drinks are worth the wait.

Podcast continues with Jason talking about serving as an infantry rifleman with the 2nd Battalion, 1st Marines. He discussions how the military inspired him to work hard and showed him that whatever you want, you can work for and how he did his best to apply that to his life outside the military. He dives deeper discussing being a craftsman after the military and then eventually starting a bar which then lead to opening Tacoma Cabana.

Jason then turns the conversation to the different stories behind the drinks, including the Eastern Sour, a drink they’ve added a twist to from the classic recipe. He talks about his search for vintage or unique rums that are out there. The guys then try the Port Light drink and a few others that were made with the Old Soldier bourbon that the guys brought with them. They also discuss the new partnership between Tacoma Cabana and the guys with the Hilltop Kitchen.
